A beautiful summer dish to enjoy on a lovely sunny day!
Making risotto for me is like going back to my childhood memories. My mum would put a chair next to the cooker for me, I would climb onto it and start to stir the risotto. She was never too far from me, keeping a watchful eye to make sure that I did this properly and without burning it.
Sometimes it seemed to take forever to prepare the risotto but I loved to sit at the Sunday lunch table knowing that I helped in the making of that wonderful creamy dish.
This version of risotto is entirely dairy-free. The stock, vegetables and wine already give it a perfectly creamy consistency that is complemented by the freshness of the prawns with the lemon infused oil and the mild sharpness of the pink peppercorns.
